A New Upscale Dining and Wine Destination Opens in a Castle Property in San Luis Obispo County

A new dining destination has opened its doors in Paso Robles. 

The Anderson Paso opened its doors on April 16, 2026, offering a full-service restaurant and bar experience. 

Located at historic 3090 Anderson Road along Highway 46 West and known as the “first castle on the right,” the restored property offers handcrafted cocktails, regional wines, and food items with a hint of Southern influence.

Sitting above the hills of Paso Robles, The Anderson Paso features castle-inspired architecture and offers sweeping views of vineyards.

The estate had earlier housed Eagle Castle Winery and, more recently, Tooth & Nail Winery, according to KSBY6. It has now been acquired by The Covelop Company, a real estate development business.

Co-owner Damien Mavis said The Anderson Paso has been designed as a gathering spot for locals, visitors, and wine industry professionals.

Positioning itself as a full-scale hospitality destination, the property includes event spaces, outdoor terraces, and rooftop venues for private dining, weddings, and corporate events. 

Menu Focuses on Seasonal Harvest 

The Anderson Paso’s restaurant is led by Chef Logan Ring. The menu draws inspiration from his time spent cooking in Korea and the Caribbean, influenced by his roots in the American Southeast, and his keen interest in the Central Coast’s seasonal harvest. 

Some of the signature items include coconut katsu shrimp with a peanut vinaigrette, steak frites served with red miso peppercorn sauce, shrimp and grits finished with scallion buerre blanc and chilli crisp, and pork porterhouse served with a traditional gamja potato salad.

Trained at the Johnson & Wales University, Ring was raised in rural Southern Illinois, where he learnt his early culinary skills in his grandfather’s kitchen. 

Ring has cooked at fine dining kitchens in New York City, international resorts across the Caribbean, and entrepreneurial ventures in the American South, and further added to his cooking skills during his time in South Korea.

Cocktails and Collaborative Wine Tastings

The Anderson Paso’s bar is anchored by handcrafted cocktails, with a program that highlights local producers and fine technique. 

Offerings include signature cocktails, such as a milk-clarified Negroni made with Croma Vera’s Vermouth Del Sol, produced by winemaker Jeremy Leffert.

The bar will also launch Fortress Flights, a tasting experience developed in collaboration with The Anderson Paso’s sister company, Fortress Custom Crush. The program will have a rotating selection of wines from small production winemakers across the Central Coast. 

Designed to be educational and approachable, the tasting experience will be guided by the hospitality team. Guests will be able to connect with the wines and explore the stories and people behind them.
