Silvergreens is set to enter the Santa Barbara dining scene in spring 2026, marking the return of the once-popular healthy dining brand.
The café will operate from 1001 State Street in Santa Barbara and has been developed in partnership with Amazon. The announcement was made on the company’s website, which lists the café as “Coming Soon.”
The café-style space will combine a coffee shop with a range of fresh, healthy items prepared daily.
Nearly 30 years after it first launched, Silvergreens is returning with a concept designed to meet current dining habits while maintaining its original focus on healthy dining. Silvergreens is expected to operate seven days a week from 7 a.m. to 5 p.m.
Through its partnership with Amazon, the café will serve both Amazon employees and the broader community.
Silvergreens was founded in 1995 in Isla Vista, where it opened its first location. At the time, it aimed to be one of the first healthy quick-service restaurants of its kind, with a strong focus on salads and freshly made food.
The original Isla Vista location operated for about 25 years before closing, and the business is now making a comeback after a break. The new concept is designed to support both dine-in and takeaway service, according to the Santa Barbara News-Press.
As part of its relaunch, Silvergreens plans a soft opening for Amazon employees in mid-April, followed by a full public opening by the end of the month. The Santa Barbara News-Press reports that the partnership with Amazon plays a key role in shaping the space and its operations.
According to the news report, the menu will include salads, sandwiches, soups, wraps, protein boxes, and fresh sides, with a focus on nutritious and convenient meals.
Prior to this announcement, Silvergreens was already operating in Santa Barbara through a grab-and-go concept at the Santa Barbara Airport.

As the Santa Barbara dining scene expands this spring, Silvergreens is not the only new spot making its debut.
A new bar, Beau, opened on State Street on March 29, taking over the former space of Crush Bar and Armada Wine. The bar was created by entrepreneur Starr Hall and features a 1920s-inspired design, along with wine, beer, cigars, and small bites. It also includes a cozy library-style setting, a retail corner, and a planned membership experience.
Meanwhile, another restaurant, Monte’s, has opened in Montecito, offering a farm-to-table menu with Korean influences. Led by chef Daniel Kim, the restaurant highlights seasonal ingredients from Rincon Hill Farm alongside a curated drinks program.
