Lily’s Donuts & Pops opened its doors at the Santa Barbara Public Market (SBPM) last week.
The shop sells freshly baked donuts. Customers also have various options for coffee drinks to pick from.
The stall is located at 38 W. Victoria Street, and it is open from 8 a.m. until the Santa Barbara Public Market’s closing time.
Despite only opening in April 2026, the SBPM stall had been in development for quite some time. The shop announced it was coming to the Santa Barbara market back in October 2024.
In a couple of months, another Lily’s Donuts & Pops location is set to open in downtown Santa Barbara.
The store will be located at 504 State Street, the spot where Cold Stone Creamery was once located.
The downtown location will have an expanded menu, team, and seating areas, as this location will be a full store rather than a stall.
Some additions to the menu will include wine, beer, and Paleta popsicles.
The SBPM location, while still offering a variety of options, is a condensed version.

Lily’s Donuts & Pops was founded by Omar Khashen, Komron Tarkeshian, and Gary Coburn.
In the ‘About’ section of their website, it states that memories of their childhood inspired the trio to start the business.
“Memories of coffee and doughnuts before a morning surf, cruising the boardwalk with friends, piling into our Bronco for a top-down drive along the coast and capping the perfect day with a bonfire at sunset defined our youth,” the statement reads.
It goes on to explain how the owners have children and families of their own, so they want to be the younger generations’ “taste track” while they make their own summer memories.
Their “key differentiator” from the many donut shops across the world? Their combinations of flavor that go beyond the surface level invite customers on a “taste bud trip.”
Yet Lily’s Donuts & Pops doesn’t want its customers to walk away with only good flavors and summer memories. They want them to leave with a newfound respect for the environment.
Recycling Coffee Cans
On their website, Lily’s has an eight-volume comic series called Recycle Our Coffee Cans.
In each volume, readers are introduced to “cool” things they can do with their cans instead of throwing them away.
In the third volume, a girl makes a pot to plant flowers. In the fifth, she crafts a decorative mailbox.
But if readers do not like the crafts, the very first volume reminds them they can recycle their cans rather than throw them in the trash.
