The idea for Holy Mini Pancakes was inspired by Joanna’s son, Finnly, and their family’s cherished Sunday brunch tradition after church. “I used to make Finnly mini pancakes at home—just little bite-sized stacks made with love,” Joanna shared. “For his second birthday, I surprised him with a full mini pancake bar where our guests could build their own stacks with syrups and toppings. It was such a hit that friends and family started asking if we could do it for their events too.”

What began as a thoughtful gesture for her son quickly turned into a growing business, with Joanna and her family now hosting weekly pop-ups and private events across the region. Their menu is both playful and decadent, with a focus on customization and quality. The most popular item? The Strawberry Church—a mouthwatering stack of fluffy mini pancakes topped with fresh strawberries, then drizzled with both maple syrup and condensed milk. “We like to play with color, texture, and ingredients to create something that looks as good as it tastes,” Joanna says.

But beyond the toppings and sweetness, it’s Joanna’s approach that sets Holy Mini Pancakes apart. “We believe in fair pricing and creating a welcoming atmosphere. Everyone’s preferences are different, so we let customers build their plates exactly how they want it—more syrup, extra fruit, or just keeping it simple. It’s all up to them.”
