OMG - where you about three weeks ago ? My Persian Cucumber plants were at full bore- I was giving them away as fast as anybody would make eye contact with me. It's the first time I tried growing them. We had about 12 plants, they popped about 10 or 12 cukes each, all fatty's avg size 6" to 8" long. Real beauties. It's all over now - Try farmers market..

For pickling, cukes must be fresh, fresh, fresh. Are there any u-pick places nearby? You want to have your canning station all set up and ready to go. No rubbery cukes, or the pickles will be flabby.

Another old-timer's tip: if you can get some unsprayed fresh young grape leaves, put one in the bottom of each jar. The tannin helps keep pickles crisp. Then pack your cukes around your dill sprigs and garlic, etc. Pack them as tight as can be, as they will shrink a bit when processing.

Homemade pickles are great, but if you won't use a case of pickles, try making refrigerator pickles, a small batch at a time. I've used the small, smooth skinned ones from Costco with good results. They last about a week in the fridge and are like the Claussen's chilled pickles--VERY crisp!

Do you have a good recipe for refrigerator pickles?

Our big garden was over run with pickling cucumbers, but that was about a month ago.

And my bread and butter pickles are tasting great (just opened a jar for a sample)

Chris Millikin a local farmer - grows up off Patterson sells at Saturday and Tuesday farmer's Markets. His produce is impeccably fresh just right for all kinds of pickles!
Thanks for the shout out 696!
