Gelsons has chopped liver in the Deli many days. And chopped liver is made with liver, onions, schmaltz and hard boiled eggs. That's the only way I like liver. You can eat it on crackers or Matzo. Actually, I think the Gelson version needs more onions.

simplest cooking in the world. a few pieces of bacon, for the fat, liver and onions and a frying pan. 5 min tops for the onions, then throw in the liver for a few min each side. Enjoy.
