Steve's Patio Cafe on de la Vina makes an excellent omelet. It's not on the menu, but they will make a Chile Verde omelet with Pepper Jack that always gets my weekend off to a great start!

Domingo's in old town Goleta has a good Santa Barbara omelet (just lose the olives) and it's affordable. Good coffee too.

Cajun' Kitchen is affordable, fixed the way you want, and a great choice. Can get grilled with the Cajun sauce or cottage cheese in lieu of other sides that come with the order. Really good coffee.
