Bok Choy Challenge

For Earth Day, the cooking column issues a green veggie challenge: what's the best thing you can do with baby bok choy?

My imagination doesn't stretch far enough for this tasty green vegetable, which I'm happy to eat just sauteed in a mix of olive and sesame oil.

In Cambria last month, I had a wonderful dish at Robin's incorporating bok choy: A Korean BBQ glazed flat iron steak, with potatoes and baby bok choy that was somehow crisp and tender at the same time. It was so good that we went back to the restaurant the second night, just so my boyfriend could order it too. They've now changed their menu and are serving the flat iron with asparagus and soba noodle cake, so don't go rushing up there to have it.

I'm anxious to hear your baby bok choy suggestions. Stir fries? Salad ideas? Soups? Happy Earth Day!
