Posole is so much better if you use canned hominy and fresh lime.

One of the great reasons to go to these Mexican markets is the incredibly low price of spices.

If you use the dried hominy as it puffy up it is infused with the flavors of chile powder and other ingredients. Canned hominy is gummy and bland.
