Does anyone know what type of dark bread is served at Chuck's uptown? They've had it for years and is
outrageously delicious. I called and no one answered. I'd love to find out where they source it from so I
can buy some for my company tonight.

Squaw bread or pumpernickel. They get it from LaBrea and bake themselves. Yum!

Pumpernickel bread contains molasses and cornmeal, squaw bread doesn't. Which one is served at Chuck's? La Brea's pumpernickel is a pumpernickel raisin loaf. Don't think they do squaw bread at all.

Chuck's pumpernickel is La Brea and does not have raisins in it. Their other bread, also from La Brea is a light rye with seeds in it.

It's always dry and tasteless. I don't know what it is but it's not Squaw which is soft and flavourful.

Chuck's website says it serves La Brea breads. La Brea's website does list pumpernickel, and it lists the ingredients (no raisins): Ingredients UNBLEACHED FLOUR (WHEAT FLOUR, MALTED BARLEY FLOUR), WATER, DARK RYE FLOUR, RYE CHOPS, SOUR CULTURE, CANOLA OIL, DEGERMINATED YELLOW CORNMEAL, contains less than 2% of each of the following: CARAMEL COLOR, UNSULPHURED MOLASSES, CARAWAY SEEDS, SALT, POPPY SEEDS, YEAST, SEMOLINA, NIACIN, REDUCED IRON, THIAMINE MONONITRATE, RIBOFLAVIN, FOLIC ACID, FERROUS SULFATE.

Chuck's steams the bread in that metal thingy...destroys it, (IMO) what a shame if it is La Brea, they have pretty decent bread.

I don't know for sure, but wouldn't D 'Angelos have pumpernickel? Or Lazy Acres, or Whole Foods? They have quite a few La Brea Breads at Gelson's.

314/OP you can get this exact same bread from Gelson's. Call them up and ask which days La Brea makes their delivery and what time, then you know where to get it freshest. It's literally the same bread and La Brea bakes all their bread on the same day as delivery, so if you know when it's arriving, you can be sure it was baked in the wee hours of the morning fresh to you!

Looks like La Brea has two pumpernickel breads. The one that 316P listed the ingredients for - which is the small round loaf and the XL which I assume means Extra Long Pumpernickel Raisin Loaf with the following ingredients: UNBLEACHED FLOUR (WHEAT FLOUR, MALTED BARLEY FLOUR), WATER, RAISINS, DARK RYE FLOUR, RYE MEAL, CARAMEL COLOR, contains less than 2% of each of the following: SUGAR, SALT, YEAST, SEMOLINA, SOUR CULTURE, NIACIN, REDUCED IRON, THIAMINE MONONITRATE, RIBOFLAVIN, FOLIC ACID, FERROUS SULFATE. Wonder which one Chucks uses.

La Brea bread is sooo good. If Gelson's doesn't have the kind of La Brea bread you wish, they will special order it for you. Here's to good pumpernickel. Someday try the La Brea chocolate cherry bread - what a treat.

Chuck's bread is consistently very good. Their bread warmer seems to do a great job of holding it every time I have been there...but then again I 've only been going there since the early 70s. usually once a week..

Outback bread is too sweet for my taste but the idea is similar. I think of Chuck's as being less sweet but it would be interesting to do a side-by-side.

Chuck's bread was wonderful when we went to their opening night in the sixties and stayed good for years. Now it is dry and tasteless in spite of the steamer.
