So you don't know many criminals who drive a Volvo? There are thousands of criminals who begin with a BMW then graduate to driving a Rolls, Masarati, Ferrari, and Lamborghini etc. And they all ply their trade in and around Wall Street and Washington.

I know a guy in jail right now that drives an Escalade and a Mercedes. He did NOT make his living honestly. Criminals drive better cars than me.

Roger, perhaps you aren't cutting the brisket correctly. It should be cut against the grain. I cooked two, a flat cut and a point cut for 8 hrs. on low in my crock pot and both were very tender. Usually the point is more tender since it has more fat. Good luck the next time!

Roger, I cooked my corned beef for 24 hours in my crock pot and it was as tough as leather. Also, don't feel bad my dryer almost caught fire because the "installer" (won't name them but it starts with Sear-) didn't put it in correctly and when he was fixing that problem he said the bearings were going out in my (3 year old) washer and I had the pleasure of paying him $129. to tell me all of this! So I have great sympathy for your frustration. We will try to have a good week anyway, won't we?

662: Maybe but don't jump to conclusions: I know two people in Montecito who, separately, chose to die at home, one attended by Hospice. No doubt there are many more. Those who are "homed" and who have money can make that choice (as well as choose Casa Dorinda or the other retirement "villages" in this area.)

Hi Roger, I always enjoy reading your posts, especially this one. You've lived life on the edge and your honesty and sense of humor is rare and refreshing. I think you should team up with a local screenwriter and put your life story into a movie since you've seen it all!

Why in the world would one assume the death occurred in a retirement home? There are hundreds of private homes in Montecito. It's a residentional area for goodness sake.

Roger - I prefer to cook corned beef in my pressure cooker... it gets VERY tender that way. I do the cabbage, carrots, & potato in there, as well, in the juice left from cooking the meat. VERY short amount of pressured time. I do know that many people are afraid to use a pressure cooker. If you are one of them, I can only suggest starting your crockpot a day sooner...

As for the homeless on the streets... it does seem to be becoming a bigger problem lately. MY experience, with a female family member I tried repeatedly to convince to seek help, is that once they accept that the homeless society is where they want to be, no amount of calling them addicted or mentally ill is going to change that choice. IF someone wants to leave that social group, the help is there for them; I did not see much interest in that among MY family member's group. BTW, many will SAY they are veterans just to get sympathy. They used to claim Viet Nam, when you could clearly tell they were at least 10 years too young. I find it very sad. Our family member ended up dying on the street, only 50 years old. Very sad indeed. Glad you made it out alive, Roger. Your path has been unique, and I, for one, find your revelations to be somehow comforting.

roger: try ice pack (a pkg. of frozen peas work well) on the toe. I've broken my little toe several times, and dislocated it dozens. OH! the PAIN is excruciating!!! I have a special tennie with the toe area cut out, as it hurts waaaay too much to put a shoe on it for about two weeks after I do it. My ortho doc says 4 Ibuprofin every four hours the first day, then ice it when you can stand to do it. This keeps the initial swelling (and pain) way down. But if you can't take OTC painkillers you are indeed SOL on this one. My deepest sympathies. Hope you're feeling a little better. (why don't you report that guy who throws your breakers??)

I think the key to tender brisket is to NOT boil it. I put it in a dutch oven, with about 1" liquid, bring it to a bare simmer, then cover it and slap it into the oven at about 215 degrees for 2 to 3 hours. The lower cooking temp tenderizes the connective tissue rather than shrinking and toughening it. Don't cook it longer than nescessary, that just squeezes all the juices out into the broth, and dries it out. You can also try wrapping in foil and bake in the oven or cook in a covered BBQ at a low temp too. You don't have to cook it in liquid. Sometimes brisket is too lean, and will be dry because there is no fat marbling. Too lean is not good.
