When I make up my holiday menu, I ask those who will be coming to complete the sentence, "It wouldn't be Thanksgiving without..."
so I make sure those dishes are on the table. My daughter and I agree that we MUST always have sweet potatoes (the bright orange flesh ones); wash them well, pierce with a fork to avoid bursting, and simply roast in their jackets at 400 degrees for about 1 hour. Place them on a sheet pan lined with foil to catch the drips as they caramelize and for ease in and out. We cook a more than we "need", a day in advance because they reheat very easily in the microwave; and we love to store extras in zipper bags in the freezer for another time. I think I will go and have one now!

I made the spring rolls at home... it was my first time and they came out amazing! Thanks ;)
