Yum! Bitter is definitely a difficult taste category to embrace, but endive/raddichio can be great. It's probably not very sustainable to buy imported Belgian endives, but I love them wrapped in bacon and baked and finished with balsamic vinegar, or the leaves separated an served as a salad with walnut oil/mustard vinaigrette.

It was a Belgian who got me into the endives. Steamed, wrapped in thin slices of ham and baked in bechemel alongside some mashed potatoes. Heavenly comfort food.
