C.C. -- Our year China back in the day was Our Year of the Cucumber. As you note, they are reasonably nutritious, and they give a major yield per acre. One of my memories was the sight of many exhausted youths lounging around Tiananmen Square during the '90 uproar, gnawing on cucumbers. It was all they had. Probably all they could afford.
