Beets are also deliscious boiled, hot, peeled, sliced or quartered and buttered. A favorite recipe calls for 1/4 cup vinegar, 1 teasp. each of sugar and salt and 1/2 teasp. horseradish mixed with about 2 cups of cold,sliced beets (from the old Joy of Cooking book) Enjoy!
