Easy last minute salad Nicoise

Ingredients to keep stocked in your pantry:

Yukon gold or waxy salad potatoes
TJ's frozen French green beans
Juice of one lime or lemon
Olive oil
TJ dijon mustard
TJ canned tuna in oil pack
TJ pitted Kalamata olives
TJ Capers

Adjust portions - 1-2 potatoes per serving

1. Whisk up mustard vinaigrette: mustard, lime/lemon, oil and salt/season to taste
2. Microwave frozen green beans lightly, chop to serving size and toss in vinaigrette
3. Microwave potatoes while beans are marinating
4. Slice pitted olives in half, rinse and drain
5. Slice warm potatoes and add to vinaigrette
6. Fold in drained canned tuna and sliced olives and capers
7. Opt: Add some chopped parsley or other green herbs to taste; serve on lettuce leaves, or not

Serve warm for a speedy last minute main dish

Leah, Your recipe sounds like the classic Nicoise...and like 672 does, I opt for a really good quality oil packed tuna. They used to have a jarred one at T.J.'s, no longer, now I go toTino's or Renato's and buy the imported Italian ones...very good substitute for grilled tuna...while you're there, pick up a can of the giant butter beans to throw on the salad in lieu of potatoes. I dress my salads with a little bit of lemon and EVOO...yum!
