I haven't tried your recipe for flavor, but as a 100% Italian, I grew up with gnocchi. The correct way to shape them is to roll a rope with the dough, about the diameter of your finger. Cut pieces about 1 inch long. Then pressing lightly with your thumb, roll them down the tines of a fork or an Italian wood paddle with ridges carved in it, creating a little pocket on one side and ridges on the other side. This creates a texture to pick up and capture the sauce. Buon appetito.
