every once in a while, I drag out my hand-crank pasta machine and make nice thin sheet noodles for lasagna. What a difference in texture. Try it if you have a pasta roller and like lasagna! I make a similar filling but include a duxelles (thank you Juila) of mushrooms--criminis minced in a processor with parsley, garlic, and salt. Add to the ricotta filling for extra flavor.

If you don't refrigerate the lasagna before you cook it, will the cooking time be less?

The answer to your refrigeration question is yes. If it is refrigerated overnight (or longer) I would add 10 minutes to the cooking time. I also do not recommend freezing an uncooked lasagne, because you need to completely thaw it before cooking, and that takes forever.
