The leftover chilaquiles were delicious as a breakfast burrito for the following two days, too. Even the red ones that I didn't like so much initially! I just wrapped them in a flour tortilla and microwaved them for 2 minutes. Speaking of which, I'd really like to get some feedback on who makes the best tortillas in SB.

Epazote is common, weed-like, probably why it wasn't in the market. (A fine little store that has unusual herbs and spices is in the small shopping center where K-Mart is - don't know the name of the shop which is close to Hollister. It might have epazote.) Click here for more about epazote. Thanks for yours. Your mention of three months in a van made me "homesick" for the many months I spent traveling around the US in a VW van. (Btw, what kind of van did you use?) I long to get moving again.

Suggestion... I make a good enchilada caserole, and have found major differences in the taste between La Victoria and Las Palmas red and green sauces. Being scientific, I once made 4 different batches at once, using the 4 different sauces. Three people agreed that the La Victoria green won hands down.

I was just gpong to write about epazote when I saw Betsy;s link. It was a super idea to do that. And much better explanation than I could give. We have a beach house in San Miguel, near Ensenada and I have a little garden patch and potted plants. One day a young gal asked me if she could have some epazote. I had no idea what she was talking about and she ponted to a tall plant. Oh, I said, that is just a weed. She told me , no, it is a very valuable healing cooking herb. My husband, who is from Guatemala, later explained he had planted it and I was glad that I had not pulled it out. It is a strange looking plant, and does appear to be a weed, although not unattractive, but certainly not pretty. It is easy to grow and just keeps growing. I will find out how to start it.

Epazote is usually available at the Farmer's Market at the stands that sell fresh herbs.

One thing I like to do when making chilequiles is to butter the tortillas on both sides and fry them on a griddle whole, flipping to cook both sides, then cot into strips. I'd rather have the butter flavor then fried chip flavor. I love chilequiles!

Easy peesie, whisk eggs in a bowl, add to frying pan with some melted butter, margarine or whatever oil you prefer. As the eggs are forming, open can of green chilis and add to taste; when eggs are about half formed, add salsa from what's open in fridge, and when 3/4 formed, fold in crushed tortilla chips. Great quick breakfast and awesome fridge clean out.

When not in the mood to cook: for awesome chilequiles, visit Jesper's Cafe Quackenbush in Los Alamos...they're not on the menu but a wonderful surprise as a special from time to time. Great new column...love it...thanks!

I too look forward to the medisterpolse! My parents (and all my relatives) are Danish and we had this dish often when I was growing up. Whenever my cousin visit from Denmark she makes this for us. In the mean time - I love Mexican food! I will try your chilequiles - they look great.
