I didn't like Kale until more recently, but it really can taste great if it is prepared well - does anyone in the EdHat Community have a favorite recipe you'd be willing to share? :-)

Kale is awesome. Particularly homemade Kale Chips! 880, you just coat some dry kale pieces with olive oil and stick them in the oven for about 30-40 minutes on 100 or 125. You may have to experiment with your own oven. They come out crispy and kinda melt in your mouth. Add sea salt, garlic or any seasoning you wish and you have a perfect snack.

I like kale best sauteed in olive oil, salt, pepper, a little garlic and some lemon. A friend toasts pine nuts in the pan first and then sautes the kale in the same pan. Really Good!

Any food should be eaten/prepared in a way complimentary to it's nature. I wouldn't eat an onion like an apple and with Kale, blending it with other foods or cooking it as Willow suggests are great ways to enjoy the nutrient-dense veggie. The lemon really helps offset the bitterness. I like sauteing mine with a touch of sesame oil as well as the basic ingredients that Willow uses. A touch of Ginger also adds a nice sense. Add some seasoned fresh salmon also sauteed in spices and oil and it makes a fantastic salad.

I think it's an acquired taste. I like it chopped up small in a salad mixed with other greens, or toasted into chips. Will give the sauté suggestion a try!

I made it last night using my/Willow's recipe. Kale tastes delicious, is good for you, and is not the same old humdrum vegetable like green beans or peas... I've also baked it like 887 says. You start with the whole bunch and it shrivels down to enough for 2-3 portions. Very nice....

It's pretty much horrible raw (only slightly better in juice), but excellent when cooked - pretty much any way. My wife sautées the kale with previously steamed carrots, in olive oil with a bit of salt and pepper (and maybe a dash of turmeric) - it's a great side for anything, especially with a rice dish.

When the nutritionists tell us to "Eat Your Greens," they are talking about kale. 887---a million thanks for the baking tip. I must try that. I used to grow my own kale and chard, when I was more ambitious. Easy & great recipe, (Use Kale or Chard or Spinach)--- "Cheesy Chard:" In large frying pan/wok, saute chopped STEMs of greens with chopped onion & garlic, in a bit of olive oil, until onion is transparent. Stir in cooked brown rice. Place chopped leaves of greens above this mixture. Put lid on; cook at low heat, until leaves wilt. Stir leaves into rice/onion/garlic mix. Add grated cheese and some soy sauce. Kidney or garbanzo beans (cooked, 1/2 cup) optional. Yum, yum. yum. So healthy. (From "Recipes for a Small Planet.")

I actually had kale sorbet that they demo'd at Costco the other day and it was surprisingly good! Also like it steamed if it's baby kale.

Dan: Earlier this week, or maybe it was last week, there was an Edhat question asking what people thought of kale. There were four posters who liked kale and there was I, who didn't. After those five comments were posted, the thread was closed to further discussion. This present posting seems to be the results of that question, and I'm just curious how 1 out of 5 = 74%. Kale--it's what's not for dinner.

Awesome! Recipe from Soho: Marinate red onions in equal parts: ~ lemon juice (I use a little less) ~ olive oil (I use sesame oil) ~ tamari (or Braggs) Chop up kale. Add sesame and sunflower seeds. Top with avocado. Devastatingly delicious. I've added this to rice, also.

I am a recent kale addict. I had an amazing salad in San Luis Obispo that I tried to copy. What I found was the most important thing is the preparation of the kale if you want to eat it raw. I use the Tuscan kale and cut it very fine after taking out the center ribs that are tough. Then I put it in a deep bowl and 'massage' it with a little olive oil and water for about 5 minutes. It will keep in the fridge for at least 4-5 days. The salad I copied had sundries tomatoes, toasted pinenuts and a lovely dressing. I have also mixed it with tomatoes from the garden and a lemon vinagerette. Each say I couldn't wait to eat my salad and I wasn't a kale fan previously.

I sell it and my customers LOVE it, HOWEVER...... I cook a lot but never found a way to make it palatable. Wish I could enjoy it as much as my healthy customers.
